Mid-way through the summer, one of my darlings declared he no longer liked cereal. I’m all about variety, but basically that’s not going to fly around here. A box of cereal and a gallon of milk is about as creative as I can get at 6:30 in the morning.
Besides, I’m pouring all of my brain cells at that hour into the contents of their lunchboxes. And they want a spectacular lunch. They dread sandwiches. They are over the apple slices and carrot sticks. “We want a good lunch,” they’ll say.
And to think I found one of them at the kitchen counter this summer with a spoon in one hand scooping up Frosted Cheerios and a Slim Jim in the other. (Obviously it wasn’t the one who all of a sudden doesn’t like cereal.) Seems like a turkey and cheese sandwich…made with love…wins for a good lunch over that any day.
So a recipe that can be made for dinner and then have the leftovers thrown into the lunchbox the next day counts as a double win for me. And hopefully a minor victory for my people.
While this recipe isn’t time consuming, you do need to plan ahead because the bread dough needs to be thawed ahead of time. So make yourself a sticky note reminder because if you’re like me, you’re not going to be thinking about bread dough at the end of a long day!
Pizza Roll-Ups
Ingredients
Two loaves of frozen bread dough
*One loaf makes about 12 rolls
Pizza Sauce
Mozzarella Cheese
Fillings (Pepperoni, Sausage, Ground Beef, Sauteed Veggies…any pizza topping)
Garlic
Parsley
Oregano
Thaw bread dough overnight in fridge.
Roll out each loaf into a large rectangle.
Cover with cheese.
Layer with filling ingredients and sprinkle with spices.
Dollop a little sauce over the ingredients…not too much.
Roll the dough long-ways like a jelly-roll.
Cut into slices, about 2 inches each.
Place slices on a baking sheet.
Bake at 375 for about 18 minutes or until browned.
Serve with pizza sauce.
For dinner, pair pizza rolls with a salad and call it a meal.
For lunch, put them in a ziplock baggie and call it a good lunch.
