You don’t have to include the chips with this recipe, but I guarantee announcing “Doritos for Dinner!” will bring your kids to the table.
After that declaration brings them to the table, the meal itself will keep them there. The last time we had this creation for dinner, one of my kiddos said aloud, “Mmm, mmm, good.” How often does that happen?
And you’re welcome to give it some nutritional goodness by adding beans or corn. I do sometimes serve mine with corn chips. Close enough, right?
Crockpot Dorito Chicken
4 Chicken Breasts (about 2 ½-3 pounds), cooked and shredded
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel tomatoes
1 pound Velveeta cheese, cut into small pieces
Doritos
In a large bowl, combine all ingredients except chips.
Spray crockpot with non-stick cooking spray.
Crumble Doritos to cover the bottom.
Add chicken mixture.
Cover with crushed Doritos.
Cook on low for 3-4 hours until heated through.
Serve with additional Doritos or tortilla chips. We sometimes eat ours over rice.
Savor your time with family. They’ll be at the table for a few helpings.
