If there’s a dish with avocado on the menu, my husband is going to order it.
Sandwich shop: add the sliced avocado, please.
Mexican restaurant: scoop of guacamole on the side.
Burger joint: why, yes, I’ll take the California-style burger.
I can look at a menu and pretty much know what he’s going order before he says it.
Avocados…they are his thing.
So, not long ago, I decided to take a staple dish, fried egg on toast, up another notch just for him.
Y’all it’s simple, but yummy.
Okay, you’re going to need one piece of bread, some butter, and an egg or two. And, of course, some slices of fresh avocado.
First, melt a pat of butter in a skillet you’ve heated to medium heat.
The next step is the key. Toast your bread in the skillet. Yes, the toaster would work. But fixing it in the skillet gives the outside a nice crunch while leaving the inside of the toast nice and soft.
We’ve had a toast incident or two around here before. One of our children may have made the statement, “Daddy’s toast hurts my mouth.” We’re talking extra crispy.
Anyway, the toast. If you’re willing to spend an extra minute with the bread, do it in the skillet.
After both sides are nice and brown, remove from the pan and add a little more butter to fry your egg.
Okay, wait! Don’t miss this part: have your avocado slices ready to put on the toast as soon as it’s finished. You want the heat from the bread to ease into that green goodness.
Top with an egg or two fried the way you like it. We like ours with a bit of a runny yoke. Rich egg, creamy avocado, crunchy toast. Oh-so-good.
